Mom’s Collins
1 oz | Paula’s Texas Lemon |
¾ oz | fresh lemon juice |
8 sprig | fresh parsley |
1½ oz | gin |
1 oz | well-chilled club soda |
Parsley bolting? Try using it in this variation on a Tom Collins. (We let our parsley go to the black swallowtail caterpillars because they are so pretty.) This is a fairly dry drink; if you want sweeter, use tonic water instead of club soda. In a mixing glass, muddle parsley with Paula’s Texas Lemon and lemon juice. Add gin and ice and shake well. Strain into Collins glass filled with ice (double strain through a tea strainer if you don’t want green bits). Add club soda and stir. Garnish with parsley sprigs.
