Don’t kill my vibe

2 oz gin
¼ oz Aperol
1 oz fresh lemon juice
½ oz lemongrass syrup
1 oz pineapple juice

Shake with ice and strain into a Collins glass. Fill with crushed ice. Garnish with lemongrass and pineapple.

To make lemongrass syrup

Chop 2 stalks of lemongrass into chunks. Bring 3 cups of water to a boil, add lemongrass and let simmer for 10 minutes. Add 3 cups of granulated sugar and stir until dissolved. Reduce heat and simmer over low heat for 10 minutes. Let it cool and strain before use.
