Gomme syrup

2 oz gum arabic
12 oz sugar
water

Combine gum arabic with 2 oz of water by weight in a small container. Stir to combine and cover. Let the mixture stand at room temperature for 48 hours or until the gum arabic is completely dissolved.

In a small saucepan, combine sugar with 4 oz of water and steadily whisk over low heat until the sugar dissolves. Fold in the gum arabic solution and stir until uniform. Remove from heat and let cool: bottle for use. Refrigerate for up to a month.
