Death in the Afternoon
| 1 oz | Absinthe |
| ¼ oz | Semi-rich simple syrup 🍯 |
| ¼ oz | fresh lemon juice |
| 4½ oz | champagne |
Stir the absinthe, simple syrup, and lemon juice with ice. Pour into a chilled glass. Top with Champagne.
Hemingway's original recipe is just 1½ oz of Absinthe topped with champagne!
